  • 2 tablespoons butter
  • 1 chopped leek (or onion, if you prefer)
  • 200g of diced pupunha palm heart
  • 1/2 cup dry white wine
  • 4 eggs
  • 100g freshly grated parmesan cheese
  • Salt and black pepper to taste
  • Fresh basil for decorate

Preparation Method

  1. In a large saucepan, melt the butter over high heat and sauté the leeks until lightly browned. Remove the leeks and set aside.
  2. In the same pan, sauté the pupunha palm heart until golden. Set aside with the leek.
  3. Add more butter to the pan and sauté the mushrooms until golden brown. Do not wash the mushrooms, just wipe them with a napkin.
  4. Add the leek and hearts of palm back to the pan with the mushrooms.
  5. Season with salt and black pepper to taste. Add the white wine and cook until the alcohol evaporates and the sauce reduces.
  6. Crack the eggs over the mushroom mixture and cover the pan to cook the eggs to desired doneness.
  7. Finish with grated parmesan cheese and garnish with fresh basil leaves.
